Paleo Chicken Taco Soup


I had put a whole chicken in the crock pot with not one idea of what I was going to do with it.  Last minute I decided to do a paleo chicken taco soup.  It’s a little on the spicy end,  so we had to tone Micah’s (our 3-year-old) down a little bit so that he could eat it, oh and did he eat it up!


1 Whole Chicken, shredded, cooked in the crock pot on low for 4 hours
1 1/2 cups of organic chicken broth
1/2 white onion, diced
2 garlic cloves, minced
2 cups of red, green and yellow bell peppers, chopped (I had a frozen pack from TJ’s and just used that)
1 small can of diced green chilies (or fresh)
1 can of organic tomato sauce
1/2 package of Trader Joes taco seasoning
Sea Salt and Pepper to taste


  1. 1. Heat olive oil in large soup pot on medium heat.  Saute onion and garlic for about 2 minutes, add bell peppers and let cook for about another 2-3 minutes or until bell peppers begin to soften a little bit, then add the can of diced green chilies and shredded chicken.
  2. 2. Add chicken broth, tomato sauce and the seasonings and let simmer for about 15 to 20 minutes to let flavors meld.
