I had put a whole chicken in the crock pot with not one idea of what I was going to do with it. Last minute I decided to do a paleo chicken taco soup. It’s a little on the spicy end, so we had to tone Micah’s (our 3-year-old) down a little bit so that he could eat it, oh and did he eat it up!
1 Whole Chicken, shredded, cooked in the crock pot on low for 4 hours
1 1/2 cups of organic chicken broth
1/2 white onion, diced
2 garlic cloves, minced
2 cups of red, green and yellow bell peppers, chopped (I had a frozen pack from TJ’s and just used that)
1 small can of diced green chilies (or fresh)
1 can of organic tomato sauce
1/2 package of Trader Joes taco seasoning
Sea Salt and Pepper to taste
- 1. Heat olive oil in large soup pot on medium heat. Saute onion and garlic for about 2 minutes, add bell peppers and let cook for about another 2-3 minutes or until bell peppers begin to soften a little bit, then add the can of diced green chilies and shredded chicken.
- 2. Add chicken broth, tomato sauce and the seasonings and let simmer for about 15 to 20 minutes to let flavors meld.
