Roasted Root Veggies

Don’t be so quick to judge this dish!  It’s amazingly good and not to mention completely wonderful for your body!  You can pretty much use any veggies, try parsnips or turnips.  Make it yours!


2 Beets, peeled and chopped into wedges
1 onion, chopped into wedges
5-6 large carrots, sliced into rounds
1 large rutabaga, chopped into wedges
1 bulb of garlic, cloves removed and peeled
1/4 cup olive oil
Zest of 1 lime (grated lime peel, or lemon)
1 tsp of italian seasoning
Sea salt and black pepper to taste


  1. 1. Preheat oven to 400 degrees
  2. 2. In a large mixing bowl combine all ingredients together, including the whole garlic cloves, mix.
  3. 3. Roast in a roasting pan for 45-50 minutes, toss once in middle of cooking.
