Ingredients:2 Beets, peeled and chopped into wedges 1 onion, chopped into wedges 5-6 large carrots, sliced into rounds 1 large rutabaga, chopped into wedges 1 bulb of garlic, cloves removed and peeled 1/4 cup olive oil Zest of 1 lime (grated lime peel, or lemon) 1 tsp of italian seasoning Sea salt and black pepper to taste
- 1. Preheat oven to 400 degrees
- 2. In a large mixing bowl combine all ingredients together, including the whole garlic cloves, mix.
- 3. Roast in a roasting pan for 45-50 minutes, toss once in middle of cooking.
