This is one from the Everyday Paleo cook book by Sarah Fragoso. Everything that I’ve made out of this cookbook has been amazing! This one was very easy and the whole family loved it!
Ingredients:1 pound ground beef 2 bell peppers, sliced (I only had green, you can use any color) 1 white onion, sliced 3 tablespoons of extra virgin olive oil 1/2 tablespoon ground cumin 1 teaspoon coriander 1/2 tablespoon turmeric powder 1 tablespoon dried oregano Sea salt and black pepper to taste 1 bunch of kale, chopped 1/2 cup pimento-stuffed green olives 3 sweet potatoes 1 ripe avocado
- In a large skillet, brown meat (start boiling water for potatoes)
- Add bell peppers, onions and olive oil, saute for about 5-7 minutes or until tender and then add in spices and mix well
- Add in the kale and green olives and cook for another 4-5 minutes, I covered it for a little bit to speed up the cooking time
- Serve over mashed sweet potatoes with a side of sliced avocado.
