Today was a good eating day for me, I was a little hungrier than usual, so I had a couple more snacks than usual. I used a lot of pre-chopped (zucchini) things and left-overs in the fridge to save me some time and use it up.Breakfast- Sauted zucchini-diced, green bell pepper-chopped with 2 organic eggs scrambled in and 1 slice of turkey bacon (uncured, Trader Joes) Snack- Apple, 1/4 cup raw almonds and 1/2 orange (left over from the kids) Lunch- Paleo Spaghetti Snack- Beet Basic Juice and 2 hard-boiled egg whites (eating the yolk is good for you, but I’m not a huge fan of hard-boiled yolk) Dinner- Kale Salad with some romaine lettuce, tomato-chopped, green onion-diced, cucumber-chopped and left over bell pepper from this morning and the last of my shredded turkey. I made a vinegarette with Trader Joes red wine vinegar 1/4 cup, extra virgin olive Oil 1/4 cup and about 1 teaspoon of grated ginger and 1 tablespoon of Sesame Seeds. Snack- Organic grass-fed beef jerky and dried fruit bar/leather from Trader Joes. Boysenberry, unsweetened 100% fruit bar Breakfast My juice ingredients Kale Salad
