I’m all for easy! This was a very quick-lunch for me this week, it can also be a quick dinner for those busy nights!
1 can of tuna, rinsed and drained
1-2 tbsp of paleo mayo
1 tbsp spicy mustard (I used Trader Joes brand)
2 tbsp red bell pepper, diced
1 green onion stalk, diced
Sea salt and ground pepper to taste
Cayenne pepper to taste
2 small lettuce/cabbage leaves
- Mix first 7 ingredients in a small bowl and add to cabbage leaves.
I had a side of grapes for a very satisfying lunch. This recipe serves 1 with the tuna tacos being about 192 calories, 7 grams of carbs, 6 grams of fat and 27 grams of protein.
