I wanted something super easy and had some chicken out. I decided to throw my veggies on the chicken and bake and it, it was simple and yummy!
4-6 chicken breast, sliced thin
Sea Salt and pepper to taste
1.5 tbsp olive oil, divided
3 cloves of minced garlic
2 green bell peppers, sliced
3 yellow squashes, chopped
1 medium white onion, sliced
- In a large bowl add salt, pepper, 1 tbsp of olive oil and garlic. Add chicken and toss until evenly coated.
- Add to a glass baking dish and top with vegetables.
- Drizzle remaining olive oil over vegetables and bake at 350 for 45 minutes, uncovered. Some juice will be in the pan from the vegetables, I just drained it out a little.
Dish out and enjoy!
