Here is a clean eating recipe that my friend Heather Boyd sent over to me. This looks delish! What is clean eating? Clean eating is eating whole natural foods that are unprocessed. This is a quick recipe that the whole family will love! Thanks Heather!
Juice of 1 orange
Juice of half lemon
2 tbsp olive oil
1/2 tbsp paprika
1/2 tbsp fresh ground black pepper
1 lb of boneless skinless chicken breast
1 cup purple cabbage, diced
1 large carrot, julienned
1/2 c. green grapes (can cut into halves)
1 c. sliced strawberries
1 cucumber, chopped
1 cup grape tomatoes, cut into halves
1 orange, peeled and segment
1 cup of cooked black beans (can do all natural canned)
- 1. Add chicken to a large bag or bowl and add first 6 ingredients and let marinate for 20 minutes at room temperature or put in fridge if doing longer.
- Grill the chicken.
- Add all ingredients in a large salad bowl and squeeze a little fresh orange juice over salad. Serve and enjoy!
This is a clean eating recipe, if wanting to make it paleo take the beans out.
