Sun Dried Tomato Dip

This is a very yummy addition to any veggie or cold meat!

1/2 c. drained oil-packed sun-dried tomatoes

1/4 c. roasted bell peppers, drained (I used Trader Joes)

1/2 c. walnuts, raw and unsalted

1 garlic clove

2 tbsp water

2-3 tbsp olive oil

  1. In a food processor add all ingredients except the olive oil.  Blend until well mixed and with processor on add olive oil slowly.

Makes about a cup of dip.  About 2 tbsp is a serving with 184 calories, 7 g carbs, 17 g fat and 3 g protein.  Make it for the week and keep in an air tight container for the week!
