Orange Glazed Tilapia with Strawberry Walnut Coleslaw

I wanted something citrus tonight.  So I ventured out and decided to make an orange glaze for the fish and for the side a strawberry walnut coleslaw.  The family gobbled this one up!

Fish:

Orange rind of one orange

Juice of one orange

1 tbsp of raw honey

1 tsp of red pepper flakes

1 tbsp rice vinegar

1 tbsp ground arrowroot (for thickness)

1 tbsp olive oil

4-6 tilapia fillets

Salt and pepper to taste

  1. Put the orange juice, rind, honey, rice vinegar, red pepper and arrowroot in a small sauce pan.  Bring to a boil and whisk then move to low heat and let sit for 3-5 minutes until glaze thickens.
  2. Add olive oil in a large skillet and add desired salt and pepper to fish and cook until flakey.
  3. Drizzle glaze over warm fish.

Strawberry Walnut Coleslaw:

About 3-4 cups of chopped red cabbage.

1 1/2 cups of chopped strawberries

1/3 c. finely chopped walnuts

1-2 tbsp coconut vinegar

2 tbsp coconut oil

1/2 fresh lime juice

Salt to taste

  1. Add all ingredients in a medium-sized bowl and toss.

Enjoy!

    I will be trying this one too. I don’t have all the ingridients but I will be getting them next grocery trip.

  2. Does arrowroot have a flavor? I’ve never cooked with it before. I also had no idea they made coconut vinegar.

    It really doesn’t have much of a flavor. It’s gluten free and used to often subsituite corn starch. I know I had no idea they had coconut vinegar until I found it at my local market. It’s pretty awesome!!
