Steak Stir Fry with Mashed Yams

This is one we’ve been making for quite a bit.  I had my inspiration from the Clean Eating Magazine with some changes.  We love this one and it’s definitely one we make often.

1 lb rib eye steak, sliced into strips

1/2 tsp sesame oil

1 tbsp apple sauce

1 tbsp reduced sodium soy sauce

1/2 tsp red pepper flakes

1 tsp fresh ginger, crushed

2 orange yams, chopped

1 green and 1 red bell pepper, sliced

1 tsp olive oil

1 medium onion, sliced

  1. In a large bowl combine beef, sesame oil, apple sauce, soy sauce, pepper flakes, garlic and ginger mix well and let marinate.
  2. In a medium-sized pot bring water to boil and add yams.  Cook until soft but still a little firm.  Remove from heat and drain.  Add back to pan and mash with potato masher.
  3. Add olive oil to large skillet or wok over med-high to high heat.  Once hot add beef mixture, bell peppers and onion.  Cook for about 5 minutes and serve over mashed yams.
