Sun-Dried Tomato Tuna Slaw

I loved this one.  I will for sure be making it again.  I found some coconut vinegar at Sprouts and thought I’d give it a try in this recipe.  I loved it.  If you don’t have any on hand apple cider vinegar or balsamic will work as well.  It will be a different flavor but still yummy.

3-4 Cups cabbage, shredded

2 cans of tuna (rinsed)

1/2 c. sun-dried tomatoes, julienned sliced

2-3 tbsp sliced almonds

3 green onions, diced

1/2 red bell pepper, diced

Dressing:

4 tbsp olive oil

2 tbsp coconut vinegar

Salt and pepper to taste

  1. Add all the slaw ingredients into a large bowl and in a small bowl whisk together the dressing ingredients.  Combine dressing ingredients into large bowl and toss.

Enjoy!
