Salmon Salad

There’s so many ways to make salads without them never being boring.  I pretty much have a salad everyday at lunch just because it’s easy and I give the hubby the left overs to take for lunch.  Like I’ve said before, you don’t have to follow recipes to the ‘T’ experiment a little.  If you don’t have something it calls for that’s okay substitute it.  This is one I will for sure make again.  You can add another can of Salmon if you want it more meatier but I only had one can.

3-4 c. romaine, chopped

2 c. cabbage, chopped

1 avocado, diced

2 green onions, diced

1/2 c. roasted bell peppers, chopped (I use Trader Joes brand)

1/2 c. green olives with pimento, sliced

1/3 c. sliced almonds

1 can salmon (rinsed)

1/2 fresh lemon juice

1 tbsp oregano, crushed

2 tbsp coconut vinegar

3-4 tbsp olive oil

  1. Toss ingredients in a large salad bowl.

Enjoy!
