Egg Salad

The camera was giving me a hard time this day, but this egg salad is perfect for our Arizona summers! 

6 hard-boiled eggs, diced

1/4 c. mayo (see mayo recipe)

Juice of half lemon

2-3 celery stalks, sliced

1 green onion, diced

1 red bell pepper, diced

2 tbsp dijon style mustard

2 tsp chili powder (less or more depending how spicy you want it)

2 tsp granulated garlic

Salt and pepper to taste

  1. Mix all ingredients in a medium-sized bowl and serve chilled.

    This egg salad was fantastic! A Nice twist to the one I usually make and I loved adding the veggies to it…gave it a great crunch!
