I had some left over ground beef from our Paleo Spaghetti so I made a yummy veggie scramble out it to get me going for the day. See the Paleo Spaghetti recipe on my site if you want to know how the ground beef was seasoned.
2 tbsp of olive oil
1/2 c. onion, diced
1/2 c. bell pepper, diced
About 1 cup of left over ground beef (extra lean)
1/2 avocado, sliced
- Add olive oil to skillet and saute the onion and bell peppers for about 3-5 minutes, then add the ground beef mixture and let warm for another 3-5 minutes. Add spinach and let cook for about 2-3 minutes stirring. Add avocado slices on top.
