I was a little nervous about these but thought I’d try them anyways. I have to say I ate a whole one to myself (I originally served myself half). So, so, so delicious! I will for sure be making these again in the near future. Perfect for that sweet tooth! And there’s no guilt after these!
3 granny smith apples
1/3 c. pecans, chopped
1/4 c. finely shredded unsweetened coconut (found at sprouts)
1/4 c. raisins or dried cranberries (I did cranberries)
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2 tbsp coconut oil
- Preheat oven to 350 F
- Remove just the core from the apples, be careful to just remove the core!
- Mix all the other ingredients together and stuff into the hole of the apple.
- Bake the apples in a glass dish for 40 minutes or until tender.
I sprinkled them with cinnamon and served. This is another one from Everyday Paleo. I’m telling you 3 weeks of all her recipes so there will be quite a few of them in here 🙂
