Baked Apples

I was a little nervous about these but thought I’d try them anyways.  I have to say I ate a whole one to myself (I originally served myself half).  So, so, so delicious!  I will for sure be making these again in the near future.  Perfect for that sweet tooth!  And there’s no guilt after these!

3 granny smith apples

1/3 c. pecans, chopped

1/4 c. finely shredded unsweetened coconut (found at sprouts)

1/4 c. raisins or dried cranberries (I did cranberries)

1 tsp cinnamon

1/4 tsp ground cloves

1/4 tsp ground nutmeg

2 tbsp coconut oil

  1. Preheat oven to 350 F
  2. Remove just the core from the apples, be careful to just remove the core!
  3. Mix all the other ingredients together and stuff into the hole of the apple.
  4. Bake the apples in a glass dish for 40 minutes or until tender.

I sprinkled them with cinnamon and served.  This is another one from Everyday Paleo.  I’m telling you 3 weeks of all her recipes so there will be quite a few of them in here 🙂
