Blueberry Coconut Date Balls

Ever had a Larabar?  Well this is like them but at a much cheaper cost.  Our little guy loves these.  He calls them cookies, and he can have all the “cookies” he wants!  There are a lot of different ways you can make these, so get creative!

1 c. almonds

1 c. dates, seeds removed

1 c. freeze-dried blueberries, unsweetened and unsulfured (I get Tj’s)

1/2 tbsp of water (optional)

1/2 c. shredded, unsweetened coconut flakes

1.  In a food processor chop the almonds until finely chopped.

2. Add dates and blueberries to the food processor and process until it starts to clump up.  I add the water in at this point to make it stick together a little better and I like the moistness of it.

3. Add mixture into a large bowl and start to roll into 1 inch balls.  Place coconut in a small bowl and roll the date balls into the coconut.  I keep these in the fridge in an air tight container.  This is such an easy on the go snack for you and your little ones!
