These Shrimp Tacos are a very easy to make. There’s so many ways to do it too! Be brave and try out your spice cabinet!
1/2 lb. shrimp, tails removed and deveined.
2 tbsp coconut oil
1/2 c. diced red onion
1 roasted bell pepper (I used Trader Joes)
2 cloves of minced garlic
2 teaspoons of ground cumin
Dash of Cayenne pepper
1 romaine lettuce leaf (I used a large one to make more of a burrito)
1. Boil shrimp until floating at top of pot. Drain and set aside.
2. Add coconut oil into hot pan and saute onion, bell pepper and garlic for about 3 to 5 minutes. Until onion is translucent.
3. Add cumin and cayenne pepper and shrimp to pan and stir until well mixed then add to lettuce leaf and enjoy!
You can add sliced avocado or some salsa too!
